It's been a busy month here at Soy Oi!
First we had the pleasure of interviewing Lauren Esposito.
LA based Lauren is a fitness guru and vegan. After scrawling through her many inspirational Instagram posts we contacted her and asked, very cheekily, if she wouldn't mind being part of an exclusive interview for the eyes of our newsletter subscribers!
Lauren is a personal trainer and has online courses for any level of fitness. We are aware that at this uncertain and quite frankly crazy time in our worlds, people are looking for an outlet. A way to stay physically and mentally active and healthy.
That's why it was so important for us to work with someone who could provide insight and advice into both of these areas. As well as following a plant based diet, obviously!
Lauren fit the bill perfectly and her interview, full of wise words and advice really is something for all to read. Even if fitness is not something you are confident with, Lauren reminds us that it's a continuing journey, and a personal one at that.
Thankfully, Lauren agreed and was a pleasure to work with! Through various emails we conducted the interview, and sent Lauren a sneak peek of our newsletter before anyone else.
We had always intended to do an interview for the newsletter but never expected to bag someone as successful and wonderful as Lauren, for our first. The only thing now is we have very high expectations to live up to for any further newsletters!

The next big news was the release of our cookbook! This was something that we decided on as we had already been collating a lot of recipes in our own personal cookbook! We thought it would be wonderful if people had access to a range of recipes with varying flavour influences, which they could have to hand all the time, on their phones or tablets! The book is available on Amazon and the links can be found on our homepage or recipe page!
With 26 recipes from meals, to sauces and accompanying dishes, our cookbook offers a sense of independent cooking. For example our falafel recipe is just that. It's not been jazzed up with an accompanying rice dish, (although there is one available in the book) it is falafel. Therefore, you have the guidance and recipe to cook the star ingredient but then your imagination comes into play. Serve with pitta breads or rice and salad, you get an element of experimentation. Or you could just eat the falafel as a lunchtime snack!
We love to experiment with food and want to share that love with our followers as well as hopefully inspire people to try new things and ways of cooking.
Being in the kitchen has always been theraputic to me and I find it focuses my mind, concentrating on the ingredients and flavour combinations as well as dicovering new aromas and tastes!
So, if you're inquisitve about new foods and want somewhere to start our book is the ideal pocket food friend.
We are currently working to release a paperback version for those of you who prefer to have a physical book so keep your eyes peeled on our social media for news of this!
